Simple Soy Sake Salmon

Men who can (and will) cook are rare in my life, but Carlene has certainly found one! Thank you, Bill! This is truly one of the most delicious salmon recipe Stan and I have ever tried. I wasn’t raised eating salmon, but Stan is a salmon lover, so I’m constantly looking for new and better ways to prepare it. After making this, I knew my search was over. This will definitely be my “go to” salmon recipe from now on. Better still, the ingredients are so simple. I had everything in my pantry except the sake.

Note: I realized after tasting the finished reduction, that this would be an excellent marinade/reduction treatment for grilled shrimp or even pork.

1/2 cup sake
1/2 cup soy sauce
1/2 cup Mirin (sweet Japanese rice wine, found at Publix)
2 tablespoons grated fresh ginger
2 cloves garlic grated
Red pepper flakes to taste
1/4 cup dark brown sugar
2 salmon fillets – about 6 ounces each
Small amount of oil to brush over the fish

Combine marinade ingredients stirring long enough to dissolve the sugar. Place the fish fillets in a Ziploc bag; pour marinade over fish and refrigerate for about four hours turning once or twice.

Remove fish fillets from marinade and set aside. Pour marinade into a small sauce pan. Simmer marinade over medium heat until it’s reduced by one half. Set aside.

Dry fish by patting it with paper towel, and brush it lightly with oil.

Grill skin side down on aluminum foil, wooden plank (as shown in photo) or grill basket over high heat for approximately eight minutes, basting with the reduction.
