Tortellini Soup

This delicious soup comes from my friend, Gail. It can be put together very quickly, with most ingredients you probably already have available.

1 tablespoons olive oil
1/2 cups each carrots, celery, onion, diced
2 teaspoons minced garlic
32 ounces Chicken Broth
14 1/2  ounce can chopped tomatoes, undrained (basil/garlic)
10 ounces fresh baby spinach
9 ounces cheese tortellini (Rana is best)
Parmesan cheese

In a large pot,  heat oil on medium high. Saute carrots, celery, onion, and garlic till soft. Add chicken broth and tomatoes. Bring to boil. Add tortellini. Cook according to manufacturers directions. Add spinach during the last two minutes of cooking time. Serve with a sprinkling of freshly grated Parmesan cheese. ENJOY!
